Los Porchs' Muffin Tin Mac






Looks amazing, right?  Porch found the recipe online today and we were both pretty pleased to find that we had all of the ingredients in our pantry so.... why the hell not?  Seems like a great side dish for dinner tonight. 


Los Porchs' Muffin Tin Mac
2 C macaroni (here I've used the vegetable blend from Trader Joe's, mostly for the color)
1 1/2 C shredded cheddar, divided (the sharper, the better in my opinion)
1 1/2C shredded mozzarella
1 C milk
1T butter
1 egg
breadcrumbs

Prepare the macaroni like normal and when it's almost done, still a little firm, drain it and add the milk, egg, butter, mozzarella, and 1 C of the cheddar.

Spoon it into the muffin tin and sprinkle the tops with the 1/2 C of cheddar and breadcrumbs.

Throw that shit in the oven at 350 and walk away for about 30 minutes.  Enjoy.

Sometimes while I'm cooking, I like to pretend I'm on Chopped or better yet, Next Food Network Star, and I jazz it up a bit.  Tonight I added some Parmesan cheese and some seasoning to the mix.  I hate bland mac & cheese so I usually have to add things to make it better.  Further, the Wisconsinite in me wanted to add more cheese, but I held back.  How's that for self-control?

The neighborhood gem

We have lived in our current place for about 2.5 years. Sunday marked the first time EVER that we walked to the neighborhood park and participated in open swim at the pool. I don't know why it took so long... maybe because we're not usually here on the weekends? Not sure. But Sunday was such a gorgeous day that we couldn't resist the urge to be outside but this preggo needed to be cool. I mentioned the pool and called to find out deets (hours, type of swim, fee, etc) and we slipped on our suits & were out the door in no time! Maternity Pictures

I let out the biggest squeal of joy when I went to get the mail today and found this package waiting for me! Seriously, I've been stalking Bobbi's life and seeing everyone's amazing teasers was making me so much more excited to get our pictures!  I'm so happy to share the amazing work done by Bobbi at The Salty Peanut.  I highly recommend her to all of my Wisconsinite friends, particularly those in the Madison area, though she's willing to travel.  Check out the website here  and let her know that Mrs. Porch sent you her way!  Her work speaks for itself so I won't gush too much...... I suppose this kid's gonna need somewhere to sleep...

As an avid blog stalker reader, I have been following several stories of other families who have struggled with infertility and am actually just days separated from Liz & her hubby at Wishing on a Snowflak e who adopted embryos and actually had her transfer the same week I did and we both got positive results. I read her blog today and saw the amazing nursery they're putting together for their daughter and I realized something kind of important... Holy shit. This kid is going to need somewhere to sleep.   And we're already almost 14 weeks deep.
